Stanley Cup Foods

Well, Its that time of year again. Stanley Cup Playoffs! And you know what that means Throwing Parties and Get-Togethers. Having your Local neighbourhood come over or just your family. Fun times for everyone! Hockey games are usually on in the evening, and I know how hard it is to get Food together in time for the game. After work you feel like doing nothing but relaxing and spending time with your loved ones. Its ok though because I'm the same way, exhausted by the time my day is done... Well, Don't you worry this time! I've got you covered! I have compiled a few Quick and easy recipes Great for entertaining. Enjoy.!

Appetizer




Delicious 7-Layer Dip



Prep time : 10 Minutes
Total time : 3 hr 10 min
Makes: 6 cups dip or 48 servings, 2 Tbsp. (30 mL) dip and 11 crackers (20 g) each

Ingredients

1 can (14 fl oz/398 mL) refried beans
1 Tbsp. taco seasoning mix
1 cup each sour cream, salsa, shredded lettuce and Shredded Cheese
4 green onions, sliced
2 Tbsp. sliced black olives
1 Bag Tortillas Chips / Box of Crackers of Choice

Directions


Mix beans and seasoning mix. Spread onto bottom of pie plate.

Layer all remaining ingredients except crackers over bean mixture. Refrigerate several hours.

Serve with crackers or Tortillas


Note: Make this dip up to 2 days ahead, cover tightly and store in the refrigerator until ready to serve.


Entree

Slow-Cooker BBQ Pork Sandwiches





Prep time: 10 Minutes
Total Time: 10Hr 10Minutes
Makes : 8

Ingredients

1 boneless pork shoulder (2 lb./900 g)
3 onions, sliced, separated into rings
1/2 cup Bold Original Barbecue Sauce
8 kaiser rolls, split
8 Cheese Slices

Directions


Place meat in slow cooker; top with onions and barbecue sauce. Cover with lid. Cook on LOW 8 to 10 hours (or on HIGH 4 to 5 hours).

Remove meat from slow cooker; cut off and discard excess fat. Chop meat into small pieces or shred with fork. Return to slow cooker; stir until evenly coated with sauce.

Fill rolls with meat mixture and Cheese just before serving.

Dessert

Jersey Cake





Prep time: 35 Minutes
Total Time: 5 Hrs 20 Minutes
Makes: 20

Ingredients


1 pkg. (2-layer size) cake mix, any flavour
2 cups cold milk
2 pkg. (4-serving size each) Jell-O Chocolate Instant Pudding
2 cups thawed Cool Whip Whipped Topping
Few drops food colouring, any colour
Decorating gel
6 candy-coated chocolate pieces

Directions


Prepare cake batter and bake in greased foil-lined 13x9-inch baking pan as directed on package. Cool in pan 15 min. (Do not remove cake from pan.) Pierce cake using round handle of wooden spoon at 1-inch intervals. (Or, use plastic drinking straw to make holes, using a turning motion to make large holes in cake.) Set aside.

Add milk to dry pudding mixes. Beat with wire whisk 2 min. or until well blended. Pour evenly over cake. Refrigerate 4 hours or overnight.

Remove cake from pan using foil edges and place on cutting board. Cut cake into pieces with serrated knife. Remove foil on bottom and arrange cake on large serving platter as shown in diagram.

Stir food colouring into whipped topping; spread onto top and sides of cake. Decorate with decorating gel and candies to represent your child's favourite team. Store in refrigerator.
